Cozy Recipes to try at Home


Taco Soup:

Everyone loves a good taco, now you can enjoy it in soup form too! Tis the season to start cooking some cozier meals and nothing beats the cold like soup.

This recipe is not only delicious and nutritious but also uses up most things in your pantry! Those bag of beans that have been sitting in the pantry for a week too long? Use them!

Those canned tomatoes that no one wants to eat? Throw them in there too!

Everything you need for this recipe goes right in the pot as the ground beef is browning so it's also super simple to make.

Crock Pot: I find using a crock pot to make this soup is the easiest way since you throw everything in a pot and leave it for a couple hours. But for those of you like me who most likely will eat this soup in mere minutes I will walk you through how to make it right on the stove!

Ingredients:

1 tsp Olive Oil

1lb Ground Beef

1 Chopped Onion

4 Cloves of Garlic or 2 tbs of garlic puree

Canned tomatoes

4 Cups Beef Broth

1tsp Paprika

1/2 tsp Pepper

1 tsp Chilli Powder

1/2 tsp Cumin

1 can of Beans

1 Cup of Frozen Corn (thawed)


In a soup pot heat up olive oil, ground beef, onions and garlic until the beef is browned and ready to go.

Once that's done throw everything else in the pot including the broth and corn

Stir together for a few minutes until everything starts to boil, reduce to a simmer and let sit for 30 min-1hr




Stuffed Zucchini:


This recipe makes my mouth water just writing about it and one of the easiest things to make! Here's what you'll need.

Ingredients:

2 Medium Zucchini's

1/2 Pound of Ground Beef

1/2 tsp Salt

1/4 tsp Pepper

1 tsp Onion Powder

1 tsp Garlic Powder

1 tbs oregeno

1 tsp Basil

1 tsp Rosemary

1/2 C Shredded Cheese

Sauce:

Now this sauce is personally one of my favourites and I even use it on basic pasta such as spaghetti.

1 C Tomatoe Sauce

1/2 Tsp Salt

1/4 tsp Pepper

1 tbs Oregeno

1/2 tsp Onion Powder

1/2 tsp Garlic Powder


Cut your Zucchini in half and with a spoon scoop out all of the stuffing til it's hollow.

Then, in a pot on the stove cook your ground beef with some olive oil, and onions til it's brown.

In a seperate bowl mix together half of the Zucchini guts with the rest of the ingredients and the other half save to put in the sauce.

Once Ground Beef is browned, Add in Shredded Cheese, Zucchini Guts and other spices then leave aside.

Mix together the other half of the Zucchini guts with the tomatoe sauce, and spices, being sure not to burn it, put it on a low heat.

Once everything is mixed together stuff the hollowed out Zucchini's and pour the sauce overtop.

Line a baking sheet with some tin foil and garnish the top with cheese and oregeno then pop it in the oven at 400 for 20 minutes or until golden brown.


These recipes are a gateway to eating a little bit healthier while having a nice and easy balanced time management. I find with the colder months like winter and fall being our most chilling time it's time to make those longer days count! Bon Appetite and happy cooking!
